The Macho Taco Story

Macho Taco was created by Stephen Bucalo and David Huckeba in 2018. They have created a menu that blends Chef Stephen’s classical French training with his 20+ years of culinary experience to deliver a cool local taco spot on 30A. The result is what Bucalo describes as “Mexican inspired soul food,” an approach to Mexican food that gives a culinary nod to his southern roots and pays homage to his experience with smoking, curing, and dry-aging meats.

Macho Taco was built and created with the help of family and friends and is the result of a life spent working hard in the kitchen. Stephen and David truly hope you enjoy what they have created, and hope to see you soon for some tasty treats!



About Us

Chef & Owner Stephen Bucalo

Chef Stephen Bucalo graduated from the Western Culinary Institute in Portland, Oregon in 2002. Over the next 17 years of his professional career he would become devoted to working in kitchens all over the United States. There is no doubt that Bucalo’s extensive and varied culinary experiences during his career have shaped his culinary expertise, his style, and his philosophy on food.

Although each restaurant experience was different, one commonality always prevailed: an immense love and respect for food. Bucalo witnessed first hand the farm-to-table movement during his tenure in California under Chefs Sean Connery and Mark Estee. Related to this Bucalo says “People often refer to farm-to-table as a movement, but when I was at Moody’s in California it wasn’t a movement, it was just the way the kitchen worked, it was all around me.” The idea is rooted in a philosophy that supports “People not purveyors, farmers not salesmen.” In Moody’s kitchen he would also become familiar with “head to tail” cooking, a culinary attitude that explores the use of the whole animal, foreshadowing his future culinary experiences in Georgia.

Being a Georgia native, returning to cook in the south was a homecoming of sorts for Chef Stephen. He found himself returning to the peach state with a focus on experiencing traditional southern cooking and what southern folks like to describe as “comfort food”. This led him to work in some of Atlanta’s most up and coming influential food spots, including becoming chef de Cuisine at Kevin Rathbun’s Steak and Executive chef at Fox Bros BBQ. Both of these restaurants have gone on to become Atlanta institutions and both represent Bucalo’s love for southern food done right.

Bucalo says of his time in Georgia “I will probably compare every steak I eat, to the ones we shared at Rathbun’s Steak, and I will be forever thankful for my time at Fox Bros. The brothers introduced me to Texas BBQ and allowed me to develop my skills in curing and smoking”.

Today Bucalo resides in Point Washington Florida — 5 miles from the Gulf of Mexico and the famed County road 30A. After almost 17 years in someone else’s kitchen his career has led him here–to open his own restaurant and share his own vison of great food. He describes the Macho menu as Mexican inspired soul food and it truly is a reflection of his current food philosophy; simple yet elegant, rustic yet refined, creative yet controlled.

David and Stephen met when Stephen moved to Florida as the Chef at the Hub.  Smoking cigars, discussing common ground in Atlanta, sharing stories about mutual friends from our past and – ESPECIALLY – sharing our common support for the Falcons started a great friendship.  As David enjoyed Stephen’s culinary creations in Florida this restaurant venture took seed and grew.

David has a love for the 30A community from childhood.  He has vacationed here all his life and he and his family have enjoyed many great memories of this community.  He has had homes here and has seen 30A grow to the spectacular place it is today. He is proud to be a part of this venture with his friend and is looking forward to helping create a “multiple must stop” destination for all visitors here.  He hopes locals will come to love Macho Taco’s casual, consistent, fresh and savory menu that Stephen has created.

David grew up in the Atlanta area.  He is a sports fan and loves to play golf – especially at Camp Creek and Sharks Tooth.

David attended Emory University and the University of Georgia.  He ultimately earned his degree from DePaul University in Chicago.

David began a career at UPS as a loader on the night shift in 1976 while attending college.  He enjoyed a 34-year management career with UPS and lived in eight different cities. He cherishes his time there and all the friends and colleagues he met and worked with along the way.  He is most proud of helping young people become successful leaders and he appreciates all he learned from his mentors and peers there.

Since his retirement from UPS in 2010 David has been a serial entrepreneur.  He has had experience in the music industry, furniture business, bar and restaurant business, and travel industry.  David has managed many of his own rental properties as well.

David and his partners in Atlanta have started three successful companies in the logistics space that aim to help companies of all sizes manage information and reduce cost in transportation and logistics. They have become trusted partners with hundreds of valued clients around the globe.

David is excited, along with Stephen, to create a dining experience that you will enjoy at The Hub on 30A.
